Throughout Appalachia, people are investing their time, energy, and resources to create and develop opportunities for businesses based on local foods. The movement also spreads to expanding access to foods in areas that many have labeled, “food deserts.” The opening of CANE (Community Agriculture and Nutritional Enterprises) industrial kitchen in Letcher County seeks to expand both business based opportunities and access to whole, healthy, locally grown foods.
